Cicvara - a traditional taste of Montenegro
Montenegro is not only a country of impressive landscapes and untouched nature, it is a destination that is also revealed through authentic cuisine and traditional dishes. Tourists who explore its coast, mountains and old villages quickly realize that each region here has its own culinary secrets.
Traditional dishes are not only part of Montenegrin history, but also an important part of the experience of any trip through the country. Among them, one dish in particular attracts the attention of all those who want to try something authentic, simple and homemade – cicvara.
This dish is one of those that is not made according to an exact recipe, but by feel. It consists only of corn flour, cheese, cream, water and salt.
Historically, cicvara arose from the need to use locally available ingredients and simply prepare a nutritious meal. Corn has been a staple crop in Montenegro for centuries and an important source of nutrition in rural households, especially in mountainous areas where growing conditions were modest. Combined with dairy products, such as cheese and cream, the dish was high in calories, hearty and easily accessible. This is why čicvara has remained an everyday food in rural areas for generations, and over time it has become a symbol of local tradition.
In old Montenegrin households, čicvara was prepared early in the morning, before going to the fields or to pasture. It was nutritious and perfect for cold days in the mountains.
Cicvara is prepared over low heat, stirring constantly. Water is usually poured into a deep saucepan, salt is added, and then pieces of cheese and cream are slowly melted. When the mixture is heated, corn flour is gradually added, stirring constantly with a wooden spoon until the mixture thickens and the butter is released - a sign that the dish is ready. The result is a thick, creamy golden-colored mass, most delicious while still warm, with a glass of yogurt or sour milk.
Today, cicvara is part of the gastronomic offer of many restaurants and rural households throughout Montenegro, from mountain huts to hotels on the coast. Although it was once considered a modest dish, it has become a recognizable symbol of Montenegrin cuisine. Guests love to choose it because it is simple, full of flavor and authentic - just like the country it comes from.
Travelers who head to the mountainous regions, especially the north of Montenegro, will often find tsicvara in rural households that offer homemade food. It is best to try it exactly where it has always been prepared - in a warm kitchen with a view of the mountain, with the smell of smoke and homemade bread being baked in the oven. It is an experience that is not only gastronomic, but also cultural because through the taste of cicvara you get to know the way of life, tradition and hospitality of Montenegro.
If you want to understand Montenegro in the right way, try its food. Cicvara is a good start.
